Christmas oatmeal

Actually I love to start Christmas with a huge brunch with lots of pastries, sugary breads and lots of butter, but since I’m not able to eat large portions because of my pregnancy, I decided to come up with a lighter and healthier breakfast. It’s also made very quickly and it looks really festive!

Ingredients for 1 bowl:

  • 4 tbsp. oatmeal
  • 1 tbsp. coconut grater
  • 1 tbsp. flax seeds
  • 1 tsp. cinnamon
  • (Frozen) cranberries
  • 1/2 tbsp. crushed pistachios
  • mint leafs
  • 150 ml unsweetened almondmilk

Directions:

  1. Put the oatmeal, coconut grater, flax seeds, cinnamon and almond milk into a little pot and put it on low fire, keep stirring it until it’s warm. Add some more almond milk if you think the porridge is to thick.
  2. When the porridge is warm, pour it into a bowl and decorate it with the cranberries, pistachios and mint leafs. I added some extra coconut grater to make it look like it snowed!
