Sometimes all you need is a warm bowl of soup, like this cauliflower soup. It’s super healthy and easy to make, so I had to share the recipe!
- 2-3 tbsp butter
- 1 yellow onion
- 6 cups chicken broth
- 1 cauliflower head (cut into florets, about 6 cups)
- 1 cup Parmesan
- 1 tbsp truffle oil
- 1 spring onion
- Salt and pepper
- Old bread
- Olive oil
Instructies:
- Heat the butter in a large pot. Slice the yellow onion thinly and cook over low heat for about 10 minutes, stirring occasionally.
- When the onions are golden brown, add the broth and cauliflower. Simmer for about 10 minutes.
- Cut the old bread into cubes and put them in a skillet with some olive oil until they’re golden brown, put it on a paper kitchen towel and set aside.
- Cut the spring onion into thin slices.
- Blend until you reach your desired consistency.
- Add the cheese and truffle oil and stir until the cheese is melted.
- Scoop the soup into bowls and top it with croutons, spring onion rings and salt and pepper to taste.
